Another Gluten Free Attempt

A beginning of a new week and a new gluten free bread recipe.

I thought that I would give a different bread recipe a try today, we are still searching for the best recipe to make sandwiches from. As pretty as the last bread came out (Molasses bread), it was a little bitter tasting and the hubby was not fond of it either.

So I just pulled the bread from the oven and it smells heavenly. It was a lot simpler recipe than the last one and it looks a lot like regular white sandwich bread. I find it helps to use parchment paper lined baking pans, the bread pops right out and there is virtually no clean up (love that!).

I will taste test this bread with my hubby this evening and post the results, good or bad. If it is a hit, I will definitely add the recipe along with a picture at the end of this blog today.

Flu Season Already

Well, I know now why I wasn't feeling up to par. I was up a good part of the night with the flu with my ever patient husband helping me change out of a sweat-soaked nightie and into a warm dry one and then piling blankets on me to keep me warm from the chills. He really is a gem!

I am already hating the weather change; doom and gloom is right around the corner... Winter. Ugh! It is way too long and cold and dreary and all the daydreaming about living in Hawaii doesn't seem to help one bit. Wow, got that off of my chest I guess!

All day I didn't know what to eat because of my stomach from last night. Eating gluten free is hard work. You have to make everything from scratch and who feels like making anything when you are sick? No chicken soup to crack open- gluten. No bread to eat because I didn't have the energy to make some or go to the local gluten free store to buy some. No Saltines- gluten! I guess I need to find some emergency stash to keep on hand for these situations in the future 'cuz not only am I sick, but now I am crabby. Poor Jim.

Hopefully I will be feeling better by tomorrow so I can get some jewelry made for November 8th, that is when my sister is having and Open House Party with Pampered Chef, Tastefully Simple, Partylite Candles, and so graciously invited me to bring my jewelry to sell. It was very thoughtful of her to ask me, now I just have to get my body to cooperate with my head so I am ready when the day comes.

Another Gloomy Monday

Well, here we start the week with clouds again. Doesn't the man upstairs realize that in order for us to function, to start our work week, or just plain get anything done, we need the sun?


I better turn some lights on to fake out my psyche and get my butt in the shower so that I can accomplish something today. I am meeting with my Nutritionist this morning to help figure out what is going on with this body of mine. We thought that gluten was the culprit but I suspect that there is more. Last night Jim (my wonderful,patient, and loving husband) helped me cut hair samples from my head to send to a lab for testing; now I have three stubbly spots on my head that will take a year and a half to catch up with the rest. Anyway the test results should reveal the vitamins and minerals that I am supposedly lacking, mind you I am taking a bazillion supplements already.


This gluten free living is really getting to me, I think that the first couple of months I didn't fully realize the impact it really has on my life both personal and social. Well I knew that it was going to be hard but come on, it's really hard!
